If you are a fan of anything garlic, as I am, then you will love this salad dressing recipe! I use this on salads and as a marinade for tuna steaks, chicken or steak.
Homemade salad dressing is quick and easy to make, requires few ingredients, and is much lower in sugar and salt than store bought varieties.
Tips for a great Roasted Garlic Salad Dressing
I recommend starting with 1 teaspoon of Dijon mustard and increasing to personal taste.
If you want a very smooth dressing for appearances, just blend the ingredients for a few seconds in a blender or food processor.
I infuse my olive oil with garlic because it is much faster than roasting garlic. However, feel free to use roasted garlic. Remove the papery outer covering and trim the top of a head of garlic just a little bit so that the tops are exposed but the cloves are still attached. Drizzle with olive oil, wrap in foil, and bake for 50 minutes. Squeeze the garlic pulp and use in the dressing. For this variation, you will want to use a blender to mix the ingredients.

Roasted Garlic and Parmesan Salad Dressing
Ingredients
- 2 tbsp red wine vinegar
- 1-2 tsp Dijon mustard
- 3 tbsp grated parmesan cheese
- 1 clove garlic sliced thin
- 1/3 cup olive oil
Instructions
Garlic Infused Olive Oil
- Heat oil over low heat.
- Add sliced garlic and cook for 10 minutes.
- Remove and discard garlic.
Salad Dressing
- Whish together infused oil, vinegar, cheese and mustard.
