Excellent Mediterranean Pasta with Tomato and Artichoke

This Mediterranean pasta with feta, Kalamata, sun-dried tomatoes, artichokes, and basil is rich in complex flavors, but don’t let that fool you. It is super easy and quick to make, just perfect for a busy weeknight or date night.

This recipe calls for a half cup of white wine. When using wine in a recipe, always use a wine that you like well enough to drink on its own. You are adding the flavor, so if you don’t like it alone, it won’t add to the flavor of the finished dish.

Variations for Mediterranean Pasta

I like to use chickpea pasta instead of regular spaghetti or angel hair, which would be my second choice for this pasta favorite. Bean pastas make the recipe much more filling and adds protein.

I usually mark artichokes as optional, only because I personally don’t care that much for them. I have had this pasta recipe both with and without artichoke and it tasted great either way.

If you or your family insists on meat in their pasta dishes, go ahead and throw in some grilled chicken. I guarantee you won’t miss it if you leave it vegetarian.

Ingredients
  

  • 1 box pasta
  • 1/4 cup oil
  • 2-3 cloves garlic sliced thin
  • 1/2 cup white wine
  • 12 ounce marinated artichoke hearts drained
  • 1 pint cherry tomatoes
  • 1/2 cup marinated sun dried tomatoes sliced
  • 1/2 cup kalamata olives halved
  • 1/2 cup basil leaves torn
  • 1 cup feta cheese

Instructions
 

  • Cook pasta according to directions.
  • Heat oil and garlic for 10 minutes on low heat.
  • Remove garlic and discard.
  • Add wine, artichoke, tomatoes, sun dried tomatoes and olives to pan and cook on medium until liquid condenses and cherry tomatoes soften, about 10 minutes.
  • Stir in basil, feta and pasta.
  • Serve warm.
