As you will read in many of my recipes, I like to make dishes that can accommodate different dietary restrictions, and this Greek salad does not disappoint. It is vegetarian and gluten free, and dairy free if you serve the feta on the side as a garnish.
Eat this and you will have visions of a Mediterranean seaside cafe. Cucumber and Garbanzo Greek Salad is a perfect blend of crunchy cucumber, creamy feta cheese, garden fresh tomato, garbanzo, red onion and olives, all brought together with a nice blend of Greek spices.
This recipe pairs well with sandwiches, wraps or burgers. Stuff a pita to serve as its own sandwich. This is a perfect side dish to Caprese Sandwiches.
Make an American style salad and add it to leafy greens.
For the meat eaters in your household, add some grilled chicken.
Tips for Successful Cucumber and Garbanzo Greek Salad
Even though I use Roma tomatoes, which are more meatier than watery, I dice my tomatoes and set them in a strainer while getting the rest of the ingredients ready. That way, the juice drains out and the salad is not soggy.
Garbanzo beans are also referred to as Chick Peas. If you have not used garbanzo beans before, it is important to drain and rinse them before using.
Variations
Feel free to use black olives or Kalamata olives, or mix the two as I did in this batch.
An easy substitution if you don’t have red or white wine vinegar on hand is to use 1 tablespoon of lemon juice instead.
Deviate from traditional Greek salad a little and throw in a bottle of marinated artichoke hearts.

Cucumber and Garbanzo Greek Salad
Ingredients
- 2 cucumbers diced
- 15 oz garbanzo beans (chick peas) drained and rinsed
- 15.5 oz black olives or kalamata olives halved
- 5 Roma tomatoes diced
- 1/2 small red onion
- 1/2 cup feta cheese crumbled
- salt and pepper to taste
- 1/4 cup olive oil
- 1 tbsp red or white wine vinegar
- 2 tsp Greek seasoning
Instructions
- Combine cucumber, garbanzo, olive, tomato, onion and feta in a bowl.
- Whisk together olive oil, vinegar, and Greek seasoning.
- Stir oil mixture into bowl and mix all ingredients.
- Salt and pepper to taste. If using kalamata olives, omit the additional salt.
- Store refrigerated.
