Sometimes we just need a little comfort. This stroganoff recipe is garlicky, creamy, buttery and tops a plate of pasta. It is also easy to make, something else in which to take comfort. I also love that this is a one pot meal, so cleanup is a breeze.
I have to give credit to my aunt, as this is her recipe that she has made for many years.
I tried to substitute beefless tips to make this vegetarian, but the texture did not fit in well with this recipe, so I do not recommend that.
Variations on Beef Stroganoff
Instead of using sour cream, substitute Greek yogurt.
I use chick pea pasta (Casarecce) instead of egg noodles. They are flavorful and smaller so you don’t get your face messy when eating them.
To make this meal vegetarian, you could double the mushrooms by slicing some large portabella mushrooms instead of using meat, but this is by nature a comfort food meat recipe.
Origin of Beef Stroganoff
The origin of this recipe does confuse me a little. I always thought it was a German dish, but in researching online, it appears to be a Russian recipe. Then I got even more confused when the main spice is Thyme, which is originally from the south Mediterranean. Oh well, it is still delicious.

Classic Beef Stroganoff Recipe
Ingredients
- 1/2 cup flour
- 2 tbsp olive oil
- 1 1/2 pound top sirloin cut into strips
- 4 cloves garlic minced
- 1 tsp pepper
- salt to taste
- 12 ounce beef broth
- 6 ounce tomato juice
- 2-3 yellow onions cut in wedges
- 6 ounce fresh mushrooms sliced
- 1/2 tsp thyme
- 3 tbsp butter
- 1 cup sour cream
- 1 box wide noodles
Instructions
- Cut top sirloin into strips, cutting across the grain.
- Coat each strip of sirloin with flour.
- Heat olive oil in large skillet over medium heat.
- Brown the sirloin.
- Add the minced garlic to pan and cook for one minute.
- Add into pan the beef broth, tomato juice, onions, mushrooms, thyme, butter, salt and pepper.
- Turn heat to low, and cook until onions are tender, about 20 minutes.
- While the stroganoff is cooking, boil water and cook noodles according to package directions.
- When onions are tender, turn off heat and stir in sour cream.
- Serve over noodles.
