Enjoy a fresh and guilt free snack while you “eat the rainbow” with this cowboy caviar. The ingredients are fresh and the flavors are bold but not spicy. Like many of the recipes on Recipe to Plate, this recipe is vegetarian and dairy-free, so feel free to bring it to picnics or gatherings. I have never returned to get my dish and found anything left in the bowl!
Make this recipe up to one day in advance and store for up to three days in the refrigerator.
Fresh Ingredients
I get excited about recipes that can be made with items from my garden. This cowboy caviar with avocado is high on that list. I use tomatoes and peppers from my garden, corn from a friend’s garden, and onion and cilantro from my CSA. If you have the opportunity to grow a garden or join a CSA, I highly recommend doing so. More on CSA’s at the end of this article.
Variations for Use
Cowboy Caviar is not just a dip, try some of these alternatives:
– Serve as a side dish with your Mexican food meal.
– Add lettuce and make it a Santa Fe Salad. Top it with shredded cheese or grilled chicken.
– Use as a topping in burritos or tacos.
– Make a wrap with cowboy caviar, lettuce, cheese, and grilled chicken.

Cowboy Caviar with Avocado
Ingredients
- 15 oz kernal corn (or 6 ears cooked) drained
- 15 oz black beans drained and rinsed
- 1 bell pepper diced
- 1 jalapeno, seeded finely diced
- 1 avocado diced
- 1/4 cup onion diced
- 2 tomatoes diced
- 1/4 cup fresh cilantro chopped
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp dijon mustard
- 1 tsp garlic powder
- 1/4 tsp cumin
- salt and pepper to taste
Instructions
- Whisk together olive oil, lemon juice, Dijon mustard, garlic powder and cumin. Set aside.
- Mix all other ingredients in large bowl.
- Stir in oil mixture and serve.
- Store refrigerated.
