Grilled kabobs are fun to make and can be customized to suit anyone’s tastes. No one will turn up their nose at this fantastic way to prepare your daily servings of vegetables! I like using bell peppers, onions, mushrooms, yellow squash and zucchini, but there are many other vegetables that would be great as well.
These do not have to be vegetarian, as your preferred meat can also be added onto the skewer. Try adding fresh pineapple chunks and cubes of pork. Make shrimp kabobs with the vegetables above, or use cubes of chicken breast or beef medallion.
Using Skewers
There are two main types of skewers, wood and metal. If you use wood skewers you will need to soak them in water first. Otherwise they will also char during grilling and splinter when you remove the grilled veggies.
If you use metal skewers, remember that they will be very hot when removing from the grill, so use a hot pad holder so that you do not burn yourself.
Other Methods of Grilling Vegetables
For the following methods, just marinade the vegetables in a bowl or plastic bag for at least 30 minutes and up to 2 hours.
While making kabobs is cute and fun, it is not the only way to grill veggies. You can cut the bell peppers in quarters and place directly on the grill. For zucchini or yellow squash, slice lengthwise into 1/4 inch thick slices and place directly on grill rack.
How do you cut onions for kabobs?
Peel the skin and outer layer of onion, but do not cut off all of the edge. Cut the onion in quarters or in 1/6ths, leaving the end to hold the layers together.
There are also baskets that you can buy for the grill, so that smaller items do not fall through the grill grate. Asparagus would be good to use in a basket, otherwise when you flip them, they tend to want to escape down the grate.
And for those who do not have a grill, feel free to use a George Foreman type grill. An indoor grill is a very practical and efficient means of grilling vegetables.
Marinades for Grilled Kabobs
Our favorite way to marinade vegetables is the simplest, just drizzle with olive oil and season with salt and pepper. Let sit for about 30 minutes before grilling. This brings out all of the delicious natural flavors of the veggies. For those of you who are trying to reduce salt intake, Penzey’s makes a salt substitute called Justice that is pretty good.
Another great marinade is Italian Dressing. Whether store bought or homemade, the directions are the same, just marinade the skewers for 30 minutes before cooking.
If using pineapple and pork, or using shrimp, try a citrus marinade. Just be sure to use an actual marinade and not straight orange or pineapple juice, as the juice will start to break down the meat fibers.
Balsamic dressings are another good choice that work well with vegetarian skewers or when adding beef.
How to Grill
You want to grill the vegetables until they are cooked to desired tenderness and slightly charred, but not too mushy.
Put them over a medium heat and grill for about 7-8 minutes, flipping only once when half way done. Do not keep moving or flipping them.
Wrapping Up
Once cooked, serve the grilled vegetables cookout style with baked beans, or indoor style over rice. We like to eat them with a side of garlic bread. However you decide to serve your grilled kabobs, I hope this becomes one of your favorite dishes, as it is for us.
