This delicious kale and wild rice salad uses just a few ingredients, and can be a side dish or meal. The citrus dressing keeps it light, while the rice provides some density.
Our favorite way to serve this is as a side dish to seafood, as it is much more exciting than plain rice and vegetables. It also makes a perfect workday lunch, without leaving you ready for an afternoon nap.
To keep the salad simple, quick and easy, we use bottled dressing, but feel free to experiment with homemade citrus dressings, or add some citrus segments to the salad.
Turn this kale salad into a grain bowl by adding protein such as garbanzo beans, and raw or cooked vegetables such as snap peas or roasted Brussels sprouts.
