This cold pasta salad is one of our very favorite summertime pasta salads. It has a touch of sweetness that is somewhat reminiscent of cole slaw. The cucumbers give it a nice crunch, and the onion, olives and pimento round it out very nicely.
Our family has been enjoying this unique pasta salad recipe for more than 35 years, and it never gets old!
Mostaccioli Salad is Made for Sharing
Mom’s Mostaccioli Salad travels well, and is dairy free and vegetarian, so it is perfect for serving to guests or bringing to a gathering. Another great benefit is that this best pasta salad recipe is made the night before, so all prep and cleanup is done in advance. Although, it is such an easy pasta salad that there is not much prep involved.
Serve Mostaccioli Salad on its own as a meal or as a side dish with sandwiches, burgers or sausages on the grill!

Mom’s Mostaccioli Salad
Ingredients
- 1 box mostaccioli noodles
- 1 can black olives sliced
- 1 tbsp olive oil
- ½ cup white vinegar
- ¾ cup sugar
- 4 ounce pimentos
- 1 large cucumber diced
- 1 medium onion chopped
- 1 tsp dry mustard
- salt and pepper to taste
Instructions
- Boil noodles according to package. Rinse in cold water.
- Mix oil and noodles.
- Add all other ingredients, stir.
- Cover and chill overnight.
- Stir, and serve cold.
