Loaded with vegetables, this dish is delicious and light. The recipe uses only one pot, so cleanup is a snap. Not at all heavy, this meal still qualifies as a casserole, since it has the three main ingredients of meat, vegetables and starch.
I made this casserole using Sun Dried Tomato Chicken Sausage and it was delicious. This recipe serves four, which was perfect for my family, but I wish I would have doubled it so that I would have leftovers.
Variations on Sausage and Sun Dried Tomato Casserole
This chicken casserole with rice recipe could be made with grilled chicken or even with smoked sausage. I chose sun dried tomato chicken sausage simply because I saw it on the grocer shelf and thought it would be good. Mix and match flavored sausages and complementing vegetable flavors.
Be mindful on which type of rice you use on this recipe. I prefer jasmine, basmati or brown rice, but brown rice requires a longer cooking time, so you would need to adjust for that so that the meat is not overcooked. Jasmine rice is a healthier and more flavorful option than white rice.
Add any other veggies that you might like or swap out the vegetables that I have used for your favorites. I meant to make this with asparagus, but when it was finished realized I forgot the asparagus in the refrigerator.
Go vegetarian and leave out the sausage altogether. I really don’t think it would be missed if adding a few more vegetables or meat substitute.

Easy Sausage and Sun Dried Tomato Casserole
Ingredients
- 1 pound chicken sausage
- 3/4 cup white or jasmine rice
- 1 1/2 cups heavy cream or half and half
- 3/4 cup water
- 1 tbsp butter
- 1 cup onion about 1/2 of medium onion
- 1 bell pepper diced
- 1/2 cup sundried tomato
- 1/4 tsp garlic powder
- 1/4 tsp celery salt
- 1/4 tsp pepper
- 4 ounce mushrooms sliced
- 1 cup shredded or grated swiss
Instructions
- Combine rice, cream, water, butter, onion, bell pepper, sun dried tomato and spices in pan over medium heat with cover.
- Bring to boil.
- Reduce heat and simmer 5 minutes.
- Stir in sausage, mushrooms and cheese.
- Simmer covered for 20 minutes.
