Need an appetizer that will complement a cookout, holiday meal, or potluck? Look no further than Mini Bell Peppers. These colorful little peppers can be made to suit a variety of tastes or themes. Similar in flavor to their larger version, but the perfect size for an appetizer.

These little stuffed peppers are so versatile, because you can stuff them with almost anything you would serve in a larger pepper or serve with peppers. I have served them different ways on different occasions, and it took people a while to recognize that it was a similar dish to what has been served in the past. So get creative and get going!

While most people think bell peppers are a healthy vegetable, they are actually a healthy fruit!

Preparing mini bell peppers

Start by cutting the tops off the pepper by cutting around the stem area. This will remove the seeds in one step. Because these peppers are so small, there is not much membrane to remove as there is in a larger size bell pepper. If you can cut the top off on a slight angle where the base is larger than the top, there will be less of a chance of cheesy stuffing dripping out of the pepper during baking.

Now you have the full inside of the pepper ready for filling. Depending on what you choose to fill the pepper with, it may be easier to pipe in the filling. Otherwise, use a small spoon or butter knife to fill.

  1. Mix together equal parts of blue cheese and crushed toasted almonds slices.
  2. Mix together about 2/3 cream cheese and 1/3 Kalamata Olive Tapenade.
  3. Scrambled eggs with your favorite omelet ingredients cooked in, topped with cheese
  4. Traditional stuffed pepper filling.
  5. Herbed Cheese stuffing (herbed goat cheese or Mediterranean flavored feta, or mix your own favorite herbs into plain goat or feta cheese).

Cook and Enjoy

Once your peppers are stuffed, place in a single layer on baking sheet and bake at 350 degrees for 20 minutes. I bake mine on a piece of parchment so that they are easy to remove and there is no mess if a little stuffing drips out of the pepper while baking.

That is all there is to it, then serve them on a platter and let the compliments roll in!
